Wednesday Nite Dinner @ La Puerta Roja Inn January 18thThe menu again this week will focus on what comes from the garden. The fava beans are looking good so we will probably have a first plate
of favas and parmesan cheese tossed lightly with good olive oil and coarse sea salt from the Sea of Cortez.
As another starter plate we will serve the bumper crop of swiss chard in our favorite way...purses filled with sausage, and our homemade bread, the purses will sit in a nice vegetable stock.
For the plato fuerte, I want to try a dish that Pat and I had at the famous and wonderful restaurant, Gaia, in Cuernavaca. It is a chicken breast filled with wild rice and rolled in dried plantains and parsley, served with an orange sauce and deep fried vegetables. We will have a cheese course this week and the dessert is grilled pineapple with mango ice cream and vanilla sauce.
And of course, the dinner ends with coffee and our homemade truffles.
